Determinants of Kimchi Consumption Behavior: A Logit Model Analysis

Abstract

This study analyzes factors affecting kimchi consumption using a logit model, focusing on consumption frequency, variety, and preference for kimchi-based dishes. Age and household size directly influence how often kimchi is eaten, with older generations and larger households consuming it more frequently. The variety of kimchi types in a household correlates with household size and income, suggesting that wealthier, larger households have greater access and demand for diverse kimchi types. The preference for dishes with kimchi is linked to gender, household size, and income, with women and high-income, larger households showing a stronger preference. These insights are crucial for the kimchi industry, policymakers, and health experts, aiding in promoting traditional diets, enhancing food security, and improving public health.
