Study on the Effect of Deep Seawater Salt on Biological Activities and Immune Function

Abstract

In this study, we investigated the potential health effects of deep seawater salt (DS) compared to those of solar-dried salt, focusing on its anti-inflammatory properties. We found that the DS had a higher pH and reduction potential and contained more OH groups than the solar-dried salt. Additionally, the analysis of DS using ICP-MS revealed that it had the highest percentage of calcium (Ca) % and magnesium (Mg) % contents among the minerals examined. We also examined the impact of deep-seawater salt on nitric oxide (NO) production and the expression of pro-inflammatory mediators, such as inducible nitric oxide synthase (iNOS) and cyclooxygenase 2 (COX-2). DS decreases NO production and increases the expression of iNOS and COX-2, indicating its potential anti-inflammatory effects. These results demonstrated the potential anti-inflammatory and immune-enhancing effects of deep-seawater salts. These effects were attributed to reduced NO production and increased iNOS and COX-2 expression. Various minerals in deep seawater, particularly those with high calcium concentrations, are believed to be responsible for these effects. In addition, components such as K are thought to contribute to the observed outcomes. Further research into the interactions between deep-seawater salts and other components is expected to facilitate the development of excellent salt products.
